This week, we hosted our first ever knife skills workshop at the ESEA Community Centre in London, celebrating the craft and culture of Chinese home cooking through our Chinese Chef’s Knife.

To do this, we could think of no-one better to work with than Jenny Lau, aka Celestial Peach. Jenny is a writer, content creator, cook and community organiser, known for her thoughtful approach to culinary storytelling.

Our guests came with varying experience of Chinese food cooking and this style of chef’s knife, but with a shared interest to learn and enjoy themselves in a relaxed and welcoming environment.

Jenny guided us through the foundations of knife handling - from safety, grip and basic cutting techniques - as well as exploring a wide range of applications of our Chinese Chef’s Knife.

Together we sliced and diced our way to making a shared meal of Dongbei cold noodles - a dish that is as visually striking as it is nourishing and delicious. Carrot, cabbage, cucumber, each colour of the rainbow submitted to the sharp steel of our Chinese Chef’s Knife!

Some braver souls also had a go at the notoriously tricky chrysanthemum tofu, which is made by making precise cuts into silken tofu, and bloomed into a chrysanthemum shape with the addition of hot broth. A gorgeous flourish to add to the classic soup element of a Chinese dining table, showcasing the often overlooked playfulness of Chinese cooking.
